Shine On!

Food. Coffee. Love. A few solid words to live by. These three words are what Soulshine in Mission Beach provides with each dish they serve up!

Plant- based foods are a hot trend right now, so what better way to become a part of the action then trying out some of the best vegetarian options San Diego has to offer! It’s no wonder this healthy movement is so popular in the culinary world! Here’s the beauty of vegetarian food: it’s delicious, made from fresh plants, and no animals were harmed in the making!

I stumbled upon Soulshine Cafe in Mission Beach while on a night run. I decided to stop in to check it out. From start to finish I enjoyed every little bit of the place. The aesthetic is calming and omits a sense of love and care. As a fellow artist, it was exciting to see unique featured art for sale hanging on the walls. There is a true sense of community when you step in through the front door. The interior is very open with wall windows that are wide-open allowing for fresh ocean air to waft in.

It was hard to choose what to order because everything on the menu sounded so delicious! After contemplating between two dishes I finally ordered the Besto Pesto Bowl and I can say I definitely made the right choice! This pesto packed bowl included super grain pasta, pumpkin seed pesto, oyster mushrooms, roasted bell pepper, sunflower seeds and topped off with cashew crema. Each bite of this dish was ambrosial to my taste buds. The varying ingredients all melded together to create a perfect medley of savory and creamy flavors.

When asked about dessert it was hard to pass up the opportunity! How could I resist the Spicy Cacao Brownie? Talk about spicing things up! This delectable chocolate brownie was rich, satisfying, and smooth. The tantalizing chili and chocolate mixture is completed with fluffy cacao mousse, luxurious date caramel sauce, and fresh seasonal berries. It was warm and velvety, yet had a subtle kick of spice adding an unusual element to a classic dessert.

Next time you’re in the mood to try some tasty vegetarian food, find your way over to Soulshine! As the great Allman Brothers Band quotes, “You gotta let your soul shine, shine ‘till the break of day!”
